Lime & Coconut Slice
Recipe
Ingredients:
Base:
1 cup desiccated coconut
1 cup cashews
½ tsp vanilla paste
1 tbsp coconut oil
1 tbsp honey
Zest from 1 lime
Top Layer:
⅓ cup cashew butter
1 tbsp coconut oil
1 tbsp honey
Juice of 2 whole limes
Pinch of salt
½ tsp vanilla paste
Extra:
Extra desiccated coconut & lime rind for garnish
Method:
Line a baking tray with baking paper. Add all the base ingredients to a food processor. Combine until the texture can be easily manipulated into the base. Add to the lined baking tray, level out, and put into the freezer to set.
Add all the top layer ingredients to the food processor and combine. When the base is set, add your top layer and sprinkle with extra zest and coconut. Set in the freezer for about 1 hour.
Remove and cut into pieces.
