ANZAC biscuits
Recipe
Ingredients:
150g butter
3-4 tbsp golden syrup (or maple/honey)
1 cup rolled oats
1.5 cups flour of choice
3/4 cup desiccated coconut
Pinch of salt
Pinch of cinnamon
1/2 tsp baking soda
Method:
Preheat oven to 180°C (350°F) and line a baking tray with baking paper.
Combine all dry ingredients in a bowl.
Melt butter and golden syrup (or alternative sweetener) in the oven or in a pot. Add wet and dry ingredients together to form a workable batter.
If the batter is too crumbly, add more wet ingredients. If it’s too wet, add more flour. You should be able to roll the batter into balls.
Form the batter into small balls, place them on the lined baking tray, and press down to form biscuits.
Bake at 180°C for 15 minutes or until slightly golden.
