Fish cakes
Recipe
Ingredients:
1-2 pieces of fresh fish, or 2 large tins of tuna/salmon, or 1 packet smoked salmon
5 white potatoes
1/2 sweet potato, peeled
1-2 grated carrots
1 grated zucchini
2 eggs
2 tbsp olive oil
1/4 cup psyllium husks
1/4 cup tapioca flour
A good pinch of salt
Method:
Preheat oven to 180°C (350°F).
Peel and chop the potatoes, then add to a pot of water and bring to a boil. Cook until soft.
If using fresh fish, bake or pan fry until cooked. Grate the carrot and zucchini.
Once the potatoes are soft, drain and mash with olive oil or butter. Add all other ingredients to the mash and combine well.
Shape the mixture into balls and place them on a lined baking tray. Press down to form cakes.
Bake for 15-20 minutes, until golden.
