4-Ingredient Peanut Butter Cookies

Ingredients:

  • 1 cup almond flour

  • 1/2 cup peanut butter

  • 1/3 cup honey or maple syrup

  • Pinch of rock salt

  • 1 tsp vanilla paste/essence

Method:

  1. Preheat the oven to 150°C (300°F).

  2. Combine all ingredients in a bowl until a good batter forms.

  3. Roll the mixture into small balls, then use a fork to press and form them into cookies.

  4. Bake for 5-10 minutes. Be careful not to overcook—remove them as soon as they begin to brown slightly.

  5. Let cool. You can either eat them as single cookies or use more peanut butter to spread on the bottom of two cookies and sandwich them together for a 2-layer cookie.
