Easy beef meat-balls

Recipe

Ingredients:

  • 250g wholemeal pasta

  • 500g organic beef mince

  • 1 egg

  • 1/3 cup psyllium husks

  • 2 tbsp tapioca flour

  • Mix of your favorite herbs & spices

  • Dash of olive oil

  • Pinch of rock salt

  • 1 tin organic whole tomatoes

Method:

  1. Boil a pot of water and cook the pasta until done.

  2. In a bowl, combine all wet ingredients (beef mince, egg, olive oil), herbs, and spices. Add psyllium husks and tapioca flour and mix well.

  3. Shape the mixture into meatballs and refrigerate for 15-30 minutes.

  4. Cook the meatballs in a hot pan until golden. Add the tin of tomatoes and simmer for around 10 minutes.

  5. Serve the cooked pasta in bowls and top with the meatball mixture. Season with extra herbs and spices if desired.
