High Fiber, Low Sugar Choc Fudge Brownies

Recipe

Ingredients:

Base:

  • 1/2 cup mashed sweet potato

  • 1/2 cup cacao

  • 1/2 cup nut butter

  • 1/2 cup flour of choice (or less for a more moist texture)

  • 1 egg

  • 20g butter

  • 1/2 cup honey or maple syrup

  • 1/2 tsp baking soda

  • 1/2 tsp vanilla paste

Top Layer:

  • 1/2 cup dark chocolate chips

  • 1/3 cup coconut cream

Method:

  1. Preheat oven to 180°C (350°F).

  2. Melt the butter and honey in a pot or oven.

  3. Add all wet ingredients into a food processor and combine. Then mix in dry ingredients.

  4. Pour the mixture into a lined baking tray and bake for 20-30 minutes.

  5. For the top layer, melt the chocolate chips and coconut cream in a glass bowl over boiling water.

  6. Once the base is cooled, spread the top layer on and chill in the fridge for a firmer texture before cutting.
