High Fiber, Low Sugar Choc Fudge Brownies

Ingredients:
Base:
1/2 cup mashed sweet potato
1/2 cup cacao
1/2 cup nut butter
1/2 cup flour of choice (or less for a more moist texture)
1 egg
20g butter
1/2 cup honey or maple syrup
1/2 tsp baking soda
1/2 tsp vanilla paste
Top Layer:
1/2 cup dark chocolate chips
1/3 cup coconut cream
Method:
Preheat oven to 180°C (350°F).
Melt the butter and honey in a pot or oven.
Add all wet ingredients into a food processor and combine. Then mix in dry ingredients.
Pour the mixture into a lined baking tray and bake for 20-30 minutes.
For the top layer, melt the chocolate chips and coconut cream in a glass bowl over boiling water.
Once the base is cooled, spread the top layer on and chill in the fridge for a firmer texture before cutting.
