Berry, apple & pear crumble
Ingredients:
Berry/Apple Layer:
1 cup strawberries
2 cups blueberries
1 cup apple, diced
1 cup pear, diced
1 tablespoon tapioca starch
1/2 cup water (add more if needed)
Crumble Layer:
1 1/2 cups oats
1 1/2 cups almond flour
1/2 cup maple syrup
1/4 cup coconut oil (solid at room temperature)
1 tablespoon lemon juice
Pinch of salt
Method:
Preheat oven to 180°C (350°F).
In a small pot on medium heat, add the strawberries, blueberries, apple, pear, and 1/2 cup of water. Simmer for 5-10 minutes, or until the fruit softens.
Stir in the tapioca starch and let it simmer for 1 more minute. Remove from heat and layer the fruit mixture into a baking dish.
In a large mixing bowl, combine the oats, almond flour, and salt. Add the maple syrup, coconut oil, and lemon juice. Use your hands if needed to break up clumps.
Sprinkle the oatmeal mixture across the top of the fruit layer, ensuring even coverage.
Bake in the oven for 20 minutes, or until the crumble is slightly golden.
Remove from the oven and serve warm with yogurt, cream, or ice cream.
