Ginger Cookies

Recipe

Ingredients:

  • 2 cups flour of choice

  • 50g butter

  • 3/4 cup honey

  • 1 tsp vanilla essence

  • 1/2 tsp baking soda

  • Pinch of cinnamon

Optional:

  • 1 cup chopped dates for Date Ginger Cookies

  • Dark chocolate or crystallized ginger for extra sweetness

Method:

  1. Preheat the oven to 180°C (350°F).

  2. Melt the butter and honey in a pot or oven.

  3. Mix the melted butter and honey with the dry ingredients until you form a texture that can be molded into balls. If using dates, add them at this stage.

  4. Roll into balls and place on a lined baking tray. Press down to form cookie shapes.

  5. Bake at 180°C for about 15 minutes or until golden.

Enjoy this nourishing snack, which is great for postpartum mums! You can also add hemp seeds or nutritional yeast for an extra boost.
