Mini Vegetable Quiche
Recipe
Ingredients:
6 eggs
Any vegetables you have (carrot, zucchini, spinach, sweet potato), grated
Dash of olive oil
Splash of milk of choice (optional, remove if dairy-free)
1/3 cup psyllium husk
Feta to top
Method:
Preheat your oven to 180°C (350°F).
In a bowl, whisk the eggs and add a dash of olive oil and a splash of milk if desired.
Grate your choice of vegetables (carrot, zucchini, spinach, sweet potato, etc.) and stir them into the egg mixture.
Add 1/3 cup of psyllium husk to help bind the ingredients.
Pour the mixture into greased muffin tins or silicone molds.
Top each quiche with a small amount of crumbled feta.
Bake in the oven for approximately 20-25 minutes, or until the quiches are set and slightly golden on top.
Remove from the oven and allow to cool before serving.
