Mini Vegetable Quiche

Recipe

Ingredients:

  • 6 eggs

  • Any vegetables you have (carrot, zucchini, spinach, sweet potato), grated

  • Dash of olive oil

  • Splash of milk of choice (optional, remove if dairy-free)

  • 1/3 cup psyllium husk

  • Feta to top

Method:

  1. Preheat your oven to 180°C (350°F).

  2. In a bowl, whisk the eggs and add a dash of olive oil and a splash of milk if desired.

  3. Grate your choice of vegetables (carrot, zucchini, spinach, sweet potato, etc.) and stir them into the egg mixture.

  4. Add 1/3 cup of psyllium husk to help bind the ingredients.

  5. Pour the mixture into greased muffin tins or silicone molds.

  6. Top each quiche with a small amount of crumbled feta.

  7. Bake in the oven for approximately 20-25 minutes, or until the quiches are set and slightly golden on top.

  8. Remove from the oven and allow to cool before serving.
