Lemon bliss balls
Recipe:
Ingredients:
1 cup raw cashews
1 cup desiccated coconut
Zest of one large lemon (double the zest if you love lemon flavour)
Juice of half a lemon
1/2 teaspoon natural vanilla extract
Pinch of salt
2 tablespoons maple syrup
1 teaspoon honey (optional)
Extra desiccated coconut for rolling
Method:
Blend all the ingredients until they form a sticky crumb.
Shape into balls and roll in extra coconut.
Refrigerate until set.
