Lemon bliss balls

Recipe:

Ingredients:

  • 1 cup raw cashews

  • 1 cup desiccated coconut

  • Zest of one large lemon (double the zest if you love lemon flavour)

  • Juice of half a lemon

  • 1/2 teaspoon natural vanilla extract

  • Pinch of salt

  • 2 tablespoons maple syrup

  • 1 teaspoon honey (optional)

  • Extra desiccated coconut for rolling

Method:

  1. Blend all the ingredients until they form a sticky crumb.

  2. Shape into balls and roll in extra coconut.

  3. Refrigerate until set.
