Healthy Carrot Cake

Recipe:

Ingredients:

  • 2 cups grated carrot

  • 2 cups flour of choice

  • 15g butter

  • 1/4 cup LSA or flaxseed

  • 2 eggs

  • 1/3 cup walnuts, raisins, or dates

  • 1 tsp vanilla paste

  • 1/2 cup honey or maple syrup

  • 2 tsp cinnamon

  • 1/2 tsp ground ginger & nutmeg

  • Pinch of salt

  • 1/2 tsp baking soda

Frosting:

  • 25g cream cheese

  • 1/4 cup maple syrup or raw sugar

  • 1 tsp vanilla paste

  • 1/4 cup chopped walnuts

Method:

  1. Preheat oven to 180°C (350°F) and line your baking tray with baking paper.

  2. Melt butter and honey (if using) in the oven or a pot.

  3. In a bowl, combine all wet ingredients, then add the melted honey and butter.

  4. Mix in the walnuts, raisins, or dates, and combine everything together.

  5. Pour the mixture into the lined baking tray and bake for about 30 minutes or until golden and firm to the touch.

Prepare Frosting:

  1. Allow the cream cheese to soften at room temperature.

  2. Mix the cream cheese, vanilla, and maple syrup (or melt raw sugar in boiling water and mix with the cream cheese).

  3. Whisk with a hand beater until smooth.

  4. Once the cake has cooled, frost it and top with more chopped walnuts.
